🥘Ingredients
- ✓12 lasagna noodles
- ✓2 cups mixed vegetables (spinach, zucchini, mushrooms)
- ✓400g ricotta cheese
- ✓200g mozzarella cheese, shredded
- ✓100g Parmesan cheese, grated
- ✓1 egg
- ✓500ml tomato sauce
- ✓2 cloves garlic, minced
- ✓2 tbsp olive oil
- ✓Salt and pepper
- ✓Italian herbs

Cook lasagna noodles according to package directions

Sauté vegetables with garlic in olive oil

Mix ricotta, egg, mozzarella, Parmesan, salt, and pepper

Spread 1/4 of tomato sauce on bottom of baking dish

Layer 3 noodles, 1/3 of cheese mixture, vegetables

Repeat layers, ending with sauce

Cover with foil and bake at 180°C for 40 minutes

Remove foil and bake 5 more minutes
