Spicy Thai chicken curry with coconut milk and green chilies

🥘Ingredients
- ✓800g chicken breast, cubed
- ✓400ml coconut milk
- ✓3 tbsp green curry paste
- ✓200g green beans
- ✓1 cup Thai eggplant (optional)
- ✓3 kaffir lime leaves
- ✓2 tbsp fish sauce
- ✓1 tbsp palm sugar
- ✓200ml chicken broth
- ✓Thai basil leaves
- ✓Red chilies for garnish

Heat 100ml coconut milk in a pan

Add green curry paste and cook for 2 minutes

Add chicken and cook for 5 minutes

Pour in remaining coconut milk and broth

Add green beans and eggplant

Simmer for 10 minutes until chicken is cooked

Add fish sauce and palm sugar
