🥘Ingredients
- ✓400g penne pasta
- ✓2 cups mixed vegetables (zucchini, bell pepper, cherry tomatoes)
- ✓4 cloves garlic, minced
- ✓100ml olive oil
- ✓50g Parmesan cheese, grated
- ✓Fresh basil
- ✓Lemon juice
- ✓Salt and pepper
- ✓Red pepper flakes

Cook pasta according to package directions

In a large pan, heat olive oil and sauté garlic

Add vegetables and cook for 5-7 minutes

Add pasta water (1 cup) to create a light sauce

Drain pasta and add to vegetables

Toss well, add lemon juice and red pepper flakes
